Red Cabbage Salad with Lemon Honey Mustard Dressing

Cabbage does not get enough credit, so I created this red cabbage salad recipe! Red, or purple, cabbage is a great source of antioxidants, vitamin C, vitamin K, and fiber. This variety of nutrients is vast and supports heart health, immunity, cancer prevention, gut health, and even inflammation!

Why a red cabbage salad?

It’s a wonder cabbage isn’t highlighted more in mainstream cooking and nutrition conversations. It holds its texture overnight when soaked with dressing and even stays relatively crunchy and fresh when cooked! Not to mention the impressive health benefits. I predict cabbage will see a major PR upgrade this year!

This quick and simple recipe balances the bitterness of red cabbage with the bright and sweet flavors of the dressing. This salad is to pair with salmon, shrimp, or grilled chicken or as a simple side salad. I even added this salad onto a sandwich with ham and havarti cheese and it added such a nice crunch and flavor!

Red Cabbage Salad with Lemon Honey Mustard Dressing

Ingredients

  • 1/2 red cabbage, thinly sliced
  • 3 sliced green onions, only the dark green part
  • juice of one lemon
  • 2 tbsp pecan honey mustard
  • 1.5 tbsp kewpie mayo
  • 1 tbsp olive oil 
  • 1.5 tbsp fresh grated garlic 
  • 1/2 tsp salt 

Directions

  1. Add sliced red cabbage and green onions to a large bowl.
  2. Combine all remaining ingredients in a jar, blender, or separate small bowl. I like to use a jar, so I can shake the jar to thoroughly mix the dressing and store the rest of the dressing if I have leftovers. 
  3. Pour the desired amount of dressing on the cabbage and green onions. Toss the salad to coat the cabbage evenly and enjoy!
