These bacon egg white bites with sun-dried tomato are the ultimate grab-and-go option: high in protein, full of flavor, and ready when you are. The smoky crunch of bacon and the tangy pop of sun-dried tomatoes turn simple egg whites into something special, while keeping things light and energizing. Make a batch ahead of time, stash them in the fridge, and you’ll have a quick, satisfying bite you can heat up for 1 minute in the microwave (or eat cold!) on your way out the door.

Bacon & Sun Dried Tomato Egg White Bites
1 cup cottage cheese
1 1/4 cup egg whites
1/2 lb bacon
1/2 cup chopped sun dried tomatoes
salt and pepper to taste
Directions
- Preheat oven to 350 and spray a muffin tin with non stick spray.
- Cook bacon in a pan. Once its done and cool enough, chop into small pieces.
- Add eggs, seasonings, and cottage cheese to a blender. I use a small smoothie blender. Blend until smooth.
- Add sun dried tomatoes and bacon to each muffin tin cup evenly. Pour egg mixture evenly into each cup. Stir each cup.
- Bake at 350 for 22-25 minutes. Enjoy an easy breakfast throughout the week!
