Spinach & Feta Egg White Bites

Making egg white bites at home is a fantastic way to save money at the drive through, save time in the morning, and get in a protein forward breakfast. The spinach in this recipe wilts down to pack lots of micronutrients in a small bite and the feta adds a surprisingly sharp flavor. I prepare mine ahead of time and heat in the microwave for 1 minute to enjoy on any day of the week. I add a slice of toast and/or a piece of fruit to make a balanced breakfast.

Spinach & Feta Egg White Bites

2 egg bites – makes 6 servings

Ingredients

  • 1 cup cottage cheese
  • 1 1/4 cup egg whites
  • 2 large handfuls of spinach
  • 3/4 cup crumbled feta
  • salt and pepper to taste

Directions

  1. Preheat oven to 350 and spray a muffin tin with non stick spray.
  2. Tear or chop spinach into small pieces. Put spinach in a microwave safe dish and microwave for 1 minute to wilt. Stir and set aside.
  3. Add eggs, seasonings, and cottage cheese to a blender. I use a small smoothie blender. Blend until smooth.
  4. Add spinach and feta to each muffin tin cup evenly. Pour egg mixture evenly into each cup. Stir each cup.
  5. Bake at 350 for 20-22 minutes. Enjoy an easy breakfast throughout the week!
