Making egg white bites at home is a fantastic way to save money at the drive through, save time in the morning, and get in a protein forward breakfast. The spinach in this recipe wilts down to pack lots of micronutrients in a small bite and the feta adds a surprisingly sharp flavor. I prepare mine ahead of time and heat in the microwave for 1 minute to enjoy on any day of the week. I add a slice of toast and/or a piece of fruit to make a balanced breakfast.

Spinach & Feta Egg White Bites
Ingredients
- 1 cup cottage cheese
- 1 1/4 cup egg whites
- 2 large handfuls of spinach
- 3/4 cup crumbled feta
- salt and pepper to taste
Directions
- Preheat oven to 350 and spray a muffin tin with non stick spray.
- Tear or chop spinach into small pieces. Put spinach in a microwave safe dish and microwave for 1 minute to wilt. Stir and set aside.
- Add eggs, seasonings, and cottage cheese to a blender. I use a small smoothie blender. Blend until smooth.
- Add spinach and feta to each muffin tin cup evenly. Pour egg mixture evenly into each cup. Stir each cup.
- Bake at 350 for 20-22 minutes. Enjoy an easy breakfast throughout the week!
