Simple Lunch Recipe: Tacos in 10 Minutes or Less 

Note: this is one serving. double or triple this to save time on lunch later in the week!

Ingredients: 

6-10 fresh or frozen shrimp

1tbsp Taco seasoning

1/3 Canned, drained black beans

1 tsp Garlic powder

1 tsp Onion powder

1/2 tsp Cumin

2 tbsp Pineapple juice

2 tbsp oil of choice

2 Tortillas 

1 romaine heart, chopped

Lime

Cilantro

1/2 chopped red onion

Optional: avocado, crema, pico de gallo

Directions: 

PREP AHEAD OF TIME:

  1. Marinate shrimp. Add shrimp, pineapple juice, taco seasoning, and oil to a bowl. Leave in refrigerator to marinate. I like to make 2-3 servings of this to save time later in the week!
  2. Chop onion, romaine, and cilantro to use later in the week.
  3. Rinse can of black beans, and mix with garlic powder, cumin, and onion powder. Salt is optional. 

LUNCHTIME:

  1. In a skillet, start warming tortillas on the stovetop. 
  2. Place desired amount of marinated shrimp in air fryer. Air fry at 350 degrees for 4-5 minutes. Even from frozen, this process is so fast!
  3. Assemble. To the tortilla, add black bean mixture, shrimp, cilantro, red onion, lettuce, and any optional add ons of your choice. I also made a salad in the side with leftover toppings.
  4. Enjoy your satisfying and balanced lunch!
